Green Apples and Leeks Salad


 This green side dish fits St Paddy's theme and goes very well with the Wellie. The buttered leeks balance nicely with the tartness of the green apple. It's a great snack on non-Paddy's day too :-)


Ingredients:
Serves 4   
- 1 large leek, white part only
- 1 teaspoon unsalted butter
- salt and freshly ground  pepper to taste   
- 2 large green Granny Smith apples cored, and thinly sliced
 

Preparation:
1. Trim the bottom green part and split leek in half lengthwise, leaving a little of the root end intact so they stay together. Wash well, and dry. Cut leek into thin strips about 2 inches long. (pic 1,2,3)
 
2. In a medium pan over medium heat, melt 1 teaspoon butter. Add leeks, season with salt and pepper and cook until soft and slightly browned, about 5 minutes. Remove from pan, and set aside.

3. Quarter, core and thinly slice the apples (pic 7)
 
3. Toss with the browned leeks and serve. (pic 8,9)
